Apricot and Almond Muesli Bars

Easy, nutritious and great for on the go, these muesli bars are a great for the whole family.

  • 3 cups Olympic Apricot and Almond Muesli
  • 1/2 cup shredded coconut
  • 1 cup cornflakes
  • 2 cups Olympic Natural Fruit and Nut mix
  • 250g butter, chopped (substitute margarine for Vegetarians)
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup honey


  1. Grease a 3cm-deep, 18cm x 28cm (base) slice pan. Line with baking paper.
  2. Combine muesli, coconut, cornflakes & fruit and nut mix in a bowl.
  3. Combine butter, sugar and honey in a saucepan over medium-low heat. Heat, stirring occasionally, until butter has melted and sugar dissolved. Bring to the boil.
  4. Reduce heat to low. Simmer for 3 to 4 minutes or until mixture thickens slightly.
  5. Turn off heat and add to oat mixture. Stir to combine.
  6. Spread mixture onto pan and bake at 180C/160C fan forced for 30 to 35 minutes or until golden.
  7. Cover and refrigerate for 1 to 2 hours or until firm.
  8. Cut into muesli bars, serve & enjoy!
