Easy, nutritious and great for on the go, these muesli bars are a great for the whole family.
Ingredients
3 cups Olympic Apricot and Almond Muesli
1/2 cup shredded coconut
1 cup cornflakes
2 cups Olympic Natural Fruit and Nut mix
250g butter, chopped (substitute margarine for Vegetarians)
1/4 cup firmly packed brown sugar
1/4 cup honey
Method
Grease a 3cm-deep, 18cm x 28cm (base) slice pan. Line with baking paper.
Combine muesli, coconut, cornflakes & fruit and nut mix in a bowl.
Combine butter, sugar and honey in a saucepan over medium-low heat. Heat, stirring occasionally, until butter has melted and sugar dissolved. Bring to the boil.
Reduce heat to low. Simmer for 3 to 4 minutes or until mixture thickens slightly.
Turn off heat and add to oat mixture. Stir to combine.
Spread mixture onto pan and bake at 180C/160C fan forced for 30 to 35 minutes or until golden.
Cover and refrigerate for 1 to 2 hours or until firm.
