Muesli Muffins

  • 2 1/4 cups of Olympic Honey Toasted Muesli
  • 1 1/2 cups of milk (vegetarians: substitute almond milk)
  • 1/2 cup mixed dried fruit and nuts.
  • Olympic dried apricots, almonds and walnuts of course!
  • 1 apple – grated
  • 1 1/4 cups self-raising flour
  • 3/4 cup brown sugar
  • 2 tsp cinnamon
  • 1 egg (vegetarians: substitute ½ mashed banana)


  1. Preheat oven to 190 C
  2. Combine muesli and milk in a bowl and leave to soak for 5-10 minutes
  3. Roughly cut dried fruit and nuts into small pieces
  4. Combine all ingredients in a bowl and stir until combined
  5. Spoon into muffin tins and bake for 25 minutes
  6. Leave to cool and then enjoy!
