Rocky Road

Rocky Road is great to make with the kids – the only cooking required is to melt the chocolate. If you want to add more colour and texture, add ½ cup chopped Stirling mixed lollies into the mixture. Enjoy!

  • 200g Stirling pink and white marshmallows, halved
  • 100g Stirling red glacé cherries, halved
  • 1/2 cup Olympic hazelnuts, skinned, roughly chopped
  • 125g milk coffee biscuits, roughly chopped
  • 750g milk chocolate melts
  • Melted butter, for greasing


  1. Grease a 25cm x 16cm slice tin with butter and line with baking paper.
  2. Combine chopped biscuits, marshmallows, cherries and hazelnuts in a large bowl.
  3. Put chocolate in a heatproof bowl and set over a saucepan of simmering water. Heat and stir occasionally until chocolate is melted and smooth. Remove from heat and set aside to cool for 5 minutes.
  4. Pour chocolate over biscuit mixture stir until well combined. You’ll need to work quickly as the chocolate will begin to set straightaway.
  5. Transfer mixture to prepared tin and spread out evenly over base using a spoon.
  6. Put slice in fridge for 60 minutes or until set.
  7. Cut into squares to serve

If you want a smoother finish to the Rocky Road (like in the picture), reserve 200g of the melted chocolate and pour over the top of the mixture once in the prepared tin and smooth with a spatula.
